I LOVE a good piece of red snapper. Or キンメダイ kinmedai as it's called here.
The more expensive of my supermarkets had some on sale one lunchtime a few Saturdays back. I was suddenly inspired and bought some.
I made two dishes with it in the same day, both very slightly different from the other.
The first dish was involved the snapper being pan-fried snapper in a lemon-butter sauce and then served with with wholewheat spaghetti and brocolli florets. I was amazed at how PERFECTLY I cooked the fish! It was so soft, yet completely cooked through. I hope I can do it again.
The second dish was almost the same, except that I served the snapper on a bed of crispy potatoes, and added some chilli to the lemon-butter sauce.
But I couldn't decide which photo I liked best...
