Recipe: Pork with Mayo-Shiso Sauce

METHOD:
1. Mix together: ume (de-seeded and finely chopped) + mayo + soy sauce.

2. Pan-fry pork slices until cooked. Add ume sauce and stir through. Turn up heat to high to caramelise the sauce a little.

3. Turn off heat. Add finely sliced shiso leaves and mix in miscellaneous leafy vegetable (today I used mizuna).

I've decided to start documenting my Japanese-y recipes. Just to remind myself that I *can* and *do* cook Japanese-y things at home.

This recipe was courtesy of a segment of a cooking show I caught a glimpse of in Osaka. Hence why there are no quantities.

The combination of flavours (sour ume, sweet mayo, salty soy sauce) in the sauce, paired with the perfumey goodness that is shiso complements the pork extremely well.
