Ikan Bilis Noodle Soup
On Tuesday, I had a craving for my mum's ikan bilis noodle soup.
And then I realised that we already had all the ingredients for it at home!
I simmered some Japanese iriko (a larger and sardine version of ikan bilis) with several generous slices of ginger and a 100 yen slab of chicken breast.
Just as the chicken was nearly cooked, I added some salt and threw in some shrimp.
After that, I shredded the chicken breast and assembled it together in a bowl with cooked chingen/bok choi and udon noodles. I poured over the soup and added chopped coriander, Mum's sambal (of course) and Mum's fried shallots.
DEEEEEEEEEELICIOUS. JUST what I felt like.
Next time I will have to hunt down some fish balls.
